How to Make Filipino Style Cheese Bread


Let's make Filipino style cheese bread! This is a tutorial on how to make one of our all time favorite Filipino bread "cheese bread". This recipe of cheese bread is best to eat on the next day, let the cheese treusel to soften up.

To make cheese bread: First thing to do is to activate the yeast by mixing yeast, warm water and 1 tbsp sugar. Bloom for at least 10 minutes. In a large mixing bowl combine all dry ingredients (bread flour, salt, and white sugar) and sift. In a separate bowl combine all wet ingredients (bloomed yeast, milk and melted butter), mix well. Once the right consistency is achieved, form your dough into a bowl and place on a large bowl greased with vegetable oil. Cover with cling wrap and rest until the dough double in size, this will take about 1 to 2 hours. While the dough is resting prepare the cheese streusel. Combine grated cheese, all purpose flour and icing sugar, mix it with your hands and break all sugar lumps. Slowly add the melted butter while mixing it with your hand. Continue mixing until the consistency becomes like a wet sand. Set aside. After resting, cut the dough into 18 pcs and shape it into a smooth round shape by grabbing the end of the dough and tack it under. Grease each pieces of dough with melted butter and roll into the cheese streusel. Place each pieces of dough onto a sheet pan lined with parchment paper, cover with dry clean towel and rest for 30 minutes. While resting the dough, pre heat your oven to 180°C/356°F.  Bake for 15 to 20 minutes or until the outside of the bread becomes golden brown.

Yield: 18 pcs
Ingredients

3 3/4 cup Bread Flour (add more if the dough is too sticky)
60 g or 1/4 cup melted Unsalted Butter
2/3 cup warm Milk
2/3 cup warm Water
8 g Yeast
1/2 cup White Sugar + 1 tbsp for the yeast
1 tsp salt

For the Cheese Streusel

1 1/4 cup Icing Sugar
1/2 cup All Purpose Flour
2 cups  grated Eden Cheese
60 g melted Unsalted Butter or 1/4 cup (room temp.)

Procedure

Note!
  • It's important that the other wet ingredients is not too hot, if it's too hot it will kill the yeast. 
Combine wet and dry ingredients, mix it with your hands until well combined and a dough is formed. Transfer on a floured kneading table and knead for 10 minutes or until the becomes smooth and elastic.

Note!
  • You can use a stand mixer with a hook if you have one to make the work easier. (knead for 8 minutes or until smooth and elastic.)
  • Add more bread flour if it's too wet. Use your dough judgment if you think that the dough is too sticky to work with.
Once the right consistency is achieved, form your dough into a bowl and place on a large bowl greased with vegetable oil. Cover with cling wrap and rest until the dough double in size, this will take about 1 to 2 hours.

While the dough is resting prepare the cheese streusel. Combine grated cheese, all purpose flour and icing sugar, mix it with your hands and break all sugar lumps.
Slowly add the melted butter while mixing it with your hand. Continue mixing until the consistency becomes like a wet sand. Set aside.

Note!
  • Make sure the the butter is at room temperature. If you add a hot butter into the mixture it will melt the cheese. You don't want it to happen.

After resting, cut the dough into 18 pcs and shape it into a smooth round shape by grabbing the end of the dough and tack it under. 
Grease each pieces of dough with melted butter and roll into the cheese streusel.

Place each pieces of dough onto a sheet pan lined with parchment paper, cover with dry clean towel and rest for 30 minutes.

While resting the dough, pre heat your oven to 180°C/356°F.

Important Note! For best texture and flavor of the bread, rest it overnight or at least 8 hours before eating to soften the cheese streusel. Because when you pull it out in the oven the cheese streusel is so crunchy that you can hardly taste the flavor of the cheese.
