Filipino delicacy "tuyo". This post is a tutorial on how to make "tuyo or filipino dried fish.
For salt water we will use to wash the fish
2 Liters Water
1/2 Cup Rock Salt
For Brine
1 Liter Water
1 Cup Rock Salt
1 Kg Tawilis Fish
Procedure
In a large bowl combine water and rock salt, mix well. Using this salted water wash the tawilis fish for about 1 minutes.
You need to wash the fish 2 times, just repeat the process..
Next prepare the brine by mixing 1 litter of water and 34 cup rock salt. Mix well...
Add the fish and gently massage for 30 seconds and soak overnight.
After soaking the fish in salted water for overnight, drain and sun dry for 3 days. Note on the second day flip the fish.
After 3 days... if it's not too hot in your place you can extend the sun drying for one or two more days.
