How to Make Yema Flan-food and recipes

Yema flan recipe with complete costing for business purposes. Using whole egg in a leche flan is harder and more complicated. But if you manage to do it properly this will lessen the expenses of the ingredients. Please make sure to read the important notes below.

Important Notes! 
-Because we are using whole egg make sure to mix the flan very well. You can also use blender or hand mixer.
-Use 5pcs medium size egg, if using large make it 4.
-Strain the mixture using fine mesh strainer or cheese cloth to remove bubbles.
-Steam over LOW FLAME for 35 to 40 minutes only!
-Make sure to follow all instruction on the video to make it perfect.

Yield: 4 pcs Medium Size Llanera (1 1/4 cup volume capacity of llanera)
Ingredients and Prices
4 tbsp White Sugar = ₱ 2.5
5 pcs Medium Size Egg (4 if using Large) = ₱ 25
1 Large Can Evaporated Milk (370 ml) = ₱ 24.50
1 Large Can Sweetened Condensed Milk (300 ml) = ₱ 40

For the Yema Sauce 
1 1/2 tbsp White Sugar = ₱ 1
1 Small Can Evaporated Milk (154 ml) = ₱ 11

1/2 cup Shredded Cheese for Toppings = ₱ 14

Procedure
Place the llanera over low flame and put 1 tbsp of white sugar. Caramelize and set aside until needed.

In a bowl combine eggs, evapoarted milk and 3/4 of large can sweetened condensed milk. Reserve the remaining 1/4 for the yema sauce. Mix well and strain using fine mesh strainer or cheee cloth.

Divide into 4 and pour into your prepared llanera.

Cover tightly with foil.

Over LOW FLAME steam for 35 to 40 minutes only. Use knife or toothpick to check if it is cooked.

Leave for 15 minutes and put in a refrigerator to cool.

To make the yema sauce, over low flame caramelize 1 1/2 tbsp whte sugar. Note! this will take about 5 minutes. Do not stir! Just swirl the pan for even cooking.

Once sugar is completely caramelize add the evaporated milk (small can) and the remaining sweetened condensed milk. Cook over low flame for about 10 to 15 minutes while continues stirring. Do not over cook it because it will continue to thicken once cooled.

Remove the flan from the llanera and pour over your cooled yema sauce.

Top with shredded cheese, be generous with the cheese it goes perfectly well with the flan.

This costing is for small entrepreneur who want to start at low with 5 to 20 pcs production. If you are planing to take this into higher volume of production like 100 and above please adjust for manpower expense and other expenses that might increase and decrease while increasing the volume of production.

Prices of Ingredients are based on mall prices like SM Supermarket, Puregold, etc wich is more expensive. If you can buy this ingredients in wet markets and other cheaper groceries you can minimize your ingredients expense and maximize your profit.
