I am sharing with you my version of Spanish Sardines. This is so easy to make and yet very healthy and delicious.

Ingredients
1 Kg Sardines Fish
1 Cup Sliced Carrots w/ Design
1/2 Cup Peeled Garlic Cloves
1/4 Cup Bay Leaf
10-13 Pcs Red Chiles
1 Tbsp Rock Salt
2 Tbsp Fish Sauce
1 Tbsp Grind Black Pepper
1 Tbsp Whole Black Pepper
1 1/2 Cup Olive Oil (coconut oil optional)
Procedure
Clean the fish remove the scale, guts, head and tail.
Arrange the fish into the pressure cooker with insert...
Add all of the remaining ingredients except oil.
Add water just level to the ingredients...
Add the olive oil or coconut oil...
Cover and cook for 1 hour to 1 hour and 30 minutes. Note! Once it's boiling adjust the fire to medium-low.
After 1 hour check if there's still water left.... If there's still water put it back to fire and cook for further 30 minutes or until all water has evaporated and the only liquid left is the oil.
Now it's done! Leave it to cool.
Plate and serve!
