How to Make Espasol-food and recipes
Another pangkabuhayan recipe! Today I'm going o show you how to make Espasol. This delicious Filipino dessert is a rice-flour treat in the shape of a slender tube. It is distinguished not only for having glutinous (sticky) rice as a main ingredients, but also for being finished with a dusting of toasted rice flour.
Ingredients
1 1/2 Cup Glutinous-Rice Flour (toasted) You can use any brand
1/4 Cup Glutinous Rice Flour (toasted for dusting)
3/4 Cup White Sugar
1.5 Cup Fresh Coconut Milk (gata)
1/4 Cup Coconut Flakes (toasted)
1 Tsp Vanilla Extract
1/4 Tsp Iodized Salt
Procedure
Over a low heat lightly toast the rice flour in a non-stick pan. Set aside.
Lightly toast the coconut flakes in a non-stick pan over medium heat. Set aside.
Place a non-stick pan over medium heat, add coconut milk, sugar, salt, vanilla extract and bring to a boil.
Once boiling add the toasted coconut flakes and cook for 4 minutes.
Add the toasted glutinous rice flour and stir using wooden spoon until the mixture thickens and dries.
Transfer the mixture in a bowl and leave to cool.
In a flat surface sprinkle the reserved toasted glutinous rice flour to dust.
Divide the cooled mixture int an equal sizes and roll over the dusted sweet rice flour until a cylindrical shape is formed.
Cut into your desire sizes.
Transfer into a serving plate or wrap using clear plastic.
