Learn how to make yema spread with 5 simple ingredients (sweetened condensed milk, egg yolk, calamansi juice, vanilla extract and butter). The common way of making yema spread is cooking it in a pot with direct heat, but in this tutorial I will teach you how to cook it in a bain marie (placing the bowl over simmering water), using this method the color of your yema spread is more lighter and the flavor is quite mellow.
Ingredients
1 300 ml/387 g Can Sweetened Condensed Milk
3 pcs Egg Yolk
Fresh Calamansi Juice for one pc calamansi or 1 tsp lemon juice
1 tsp Vanilla Extract (I forgot to put it in the picture)
50 g Butter
Procedure
In a pot pour 1 L of water and bring to a boil.
In a large mixing bowl combine condensed milk, egg yolk and fresh calamansi juice. Mix well...
Once the water is boiling put the mixing bowl on the top of the pot and start mixing until quite thick but still of pourable consistency.
After 10 minutes...
After 18 minutes turn off the fire. Do not make it so thick as it will a bit more upon cooling.
Add vanilla extract....
Add butter and mix well.
And your yema spread is done! Enjoy with your favorite bread!
